Our olives of excellent quality: Nocellara del Belice and Cerasuola are harvested manually.
The harvest, after careful selection, is done at the right degree of ripeness and, immediately, the olives are taken to the Oil Mill for milling, in order to avoid the oxidative process and thus preserve all its organoleptic characteristics.
The pressing of the olives use cold mechanical methods and the cultivation does not include any chemical treatment.
This guarantees a high quality of the finished product which allows it to enhance its fruity aroma; in addition, it is improved in the conservation in fact polyphenols, excellent natural oxidants, are not dispersed. So we finally conserve our extra virgin olive oil in the special bottle.
